O Christmas Tree

After Thanksgiving the family (mostly mom) helped decorate Nanny's Christmas Tree. Of course Sterling and Hudson had to get in on the action too! They both did a great job of placing ornaments on the tree and helping Gigi get it ready for Christmas.



And here's my Christmas Tree!! I've added quite a bit more to it this year, but I had fun decorating. It definately adds a lot of festivity to my little apartment :)

Blue Moon Cupcakes


With all the Holiday Parties to attend this time of year I wanted to help out and bring some snacks. So I headed to my computer to jump on Pinterest- the holder of the best and most creative ideas. I found this idea for Blue Moon Cupcakes. YES PLEASE! Not only do I love Blue Moon, but happened to already have the Winter Abbey Ale in my fridge and decided it would make a good holiday snack. Everything was to be made from scratch so this was no small task for someone who doesn't bake often. But the experience was totally worth i

 Mixing the batter was pretty standard, but getting to the the icing was a little more challenging. When you beat everything by hand expect it to take 10x as long! It said to beat the icing for 7 minutes to get it to the right consistency- kind of a merange to reflect the foam top of blue moon. But I beat constantly for 45 minutes it only kind of got it to where it was supposed to be, but it was good enough as I was then late for my party!

 These are the beautiful cupcakes! I added some red food coloring to make it more orange-y looking like the actual beer. I also used white cupcake liners so that they kind of became transparent after cooking. Although, I think cute holiday cupcake liners would of been fun too!

 This is what they look liked finished! Blue Moon in the batter, orange juice in the icing, and a little orange slice to finish off the look. They really were delicious and I'm sure would be even better with an electric mixer!!

 Next time you need a good dessert to bring consider making these! They were pretty simple and the ingredients were mostly things you would find in your pantry or fridge :) Below is the recipe and the link to the original blogger who created these wonderful cupcakes.

Blue Moon Cupcakes
3/4 c unsalted butter, softened
1 3/4 c sugar
2 1/2 c flour
2 1/2 tsp baking powder
1/2 tsp salt
3 eggs, room temperature
1 tsp vanilla
2 drops red food coloring
10 drops yellow food coloring
1/2 tsp orange zest
1 c Blue Moon beer
1/4 c milk
Frothy White Frosting [recipe follows]
small orange slices, for garnish

Directions:
1. Line 24 cupcake trays with liners. [Use white liners if you can, they become translucent during baking and really sell the mini Blue Moon image]. In a medium bowl, mix together flour, baking power and salt.
2. In a large bowl beat butter on medium speed for 30 seconds. Add sugar a little bit at a time, beating well. Once it's all added beat for 2 more minutes.
3. Add eggs, beating after each.
4. Add vanilla, food coloring and orange zest and beat.
5. Mix beer and milk in a measuring cup. Alternatively add beer / milk mixture and flour mixture to butter mixture in the large bowl, beating after each. End on the flour mixture.
6. Fill cupcake liners 2/3 full. Bake for 18 minutes at 375 degrees F until cupcakes are golden and a toothpick inserted in center comes out clean.
7. Once cool, frost each cupcake with a generous amount of frosting. Just before serving, garnish each with a small orange slice.

Frothy White Frosting
2 egg whites, room temperature
1 tsp vanilla extract
1 tbsp orange juice
1 c sugar
1/4 tsp cream of tartar
1/3 c water

Directions:
1. In a saucepan, mix sugar, water and cream of tartar. Cook on medium heat until sugar is dissolved and mixture is bubbly.
2. In a large bowl, beat egg whites, vanilla and orange juice until soft peaks form. Slowly add hot sugar mixture, beating continuously. Beat for 7 minutes until stiff peaks form.

ALCS- Game 6

The day before I moved back to Austin was the ALCS Game 6. I knew the Rangers were going to win and I wanted to go to a game so bad that I decided to buy a standing room only ticket and go to the game. I figured if I could stand through 5 Shakespearean shows this summer than I could stand through a baseball game. I knew if I was at home watching the game and we won that I would be really upset I wasn't there. I couldn't afford to take anyone with me so I just went by myself and I was so glad I did!!


I got there around 6:30 purchased a beer and found my spot! I knew there would be a lot of standing spectators and I wanted to be able to see. I ended up standing in right field behind the lower section of seats. It was a great view and I was right by the isle so the concessions came to me! The only time I had to leave was to use the restroom, but luckily I had made friends with the guy next to me who saved my spot while I was gone :)




Watching the 15 runs the Rangers scored made standing so worth it! In fact, the stadium was standing half the game anyway since there were so many runs. It was a great feeling knowing we would win the game and go the World Series for the 2nd year in row! (even though it didn't turn out too well). The ceremony, fireworks, and confetti made the celebration most spectacular. 




I was so happy I bought a ticket! I'll be a Rangers Fan for LIFE!

ISA- International Studies Abroad



Shortly making my post about unemployment, I got got a job interview with ISA or International Studies Abroad. It's a study abroad company based in Austin that I learned about when I was in London. They send students to the FSU London Study Centre Theatre Studies program so I got to know a little more about them over my 6 months. Then when I got home I started doing more research and realized it would be a great company to work for!
I checked the website multiple times a week hoping a job would open up that I was quialified for and in the beginning of October it did! So on my birthday I drove down to Austin, for my first interview. I was then called back for another one the following week and was offered the job! This was super exciting as this is my first "real" job. Not only did I get a job, but I got to move back to Austin.
I've now finished 3 weeks at the job and it's going great. I'm a Student Services Representative which means I contact students we've met at study abroad fairs to see if they're still interested or if the have any questions. I mostly get voicemails, but everday you get a couple of students who are really excited or who ask good questions. Sometimes they aren't so nice, but then I just walk around the office talking to people to get back in a better mood. I'm making new friends and I like the people I work with so it's going great so far! And in the Spring semester I will probably get to travel around the US a little to different study abroad fairs which might help my restlessness in the office : )

Thanks to everyone who supported me and encouraged me during this time!! I enjoyed unemployment, but I'm happy to have my stuff back, organized, and to have a normal schedule again......all I need is a cat! haha we'll see.

Unemployed Life

So every once in awhile people aske me, "What exactly do you do all day?" This is an excellent question! For the most part life doesn't change much from day to day, but I am trying to be productive. Unemployment isn't quite what I expected it to be. I thought it would feel like a vacation for the first couple of weeks and then I would just get bored, but so far I'm still enjoying it! 

(It could easily be wom-man)

For the last month I've been studying for the GRE. It's like the SAT, but for grad school. I've been trying to study a little bit every day and go to different coffee shops to find the best place to study! Starbucks and It's A Grind were my most common stops. I took my test on Monday!! So now I'm just waiting for my scores....and looking for something else to keep me busy :)



I've also been working a little at Woolley's Frozen Custard- where I worked in HS. I usually work 1-2 days and it's something different for me to do every week. This last week and for the next couple I'm also helping out a local photographer with taking school photos. It's pretty easy, but exhausting! Those 2 yr olds don't always want to smile and they DO NOT think we're funny.

Besides continuing to apply for jobs I'm going to start learning Spanish soon and possibly even start on a P90X regime. I will also be celebrating another birthday on Tuesday so really this is my birthday week.... plus the Rangers are in the PLAYOFFS AND it's football season. I mean I don't need much more to keep me busy :)

More S'Mores Please!

The other night Mom and I headed to Tillman's Roadhouse in downtown to have some tableside s'mores! S'mores are my favorite dessert and I saw on the Food Network that Tillman's make their ingredients from scratch! They make dark chocolate bark, 3 different flavored marshmallows (orange, maple, and coffee) and cinnamon graham crackers. They didn't dissappoint! One of my favorite places in Austin is a coffee shop named Halcyon that serves table side s'mores so I was happy to find a place in Ft. Worth as well. 




Mmmm it was soo good! The maple marshmallows were my favorite!

Beach Time

This Labor Day wknd Mom and I went to Houston to see the rest of the family. We had a really great relaxing weekend. On Monday we headed down to Galveston, did a little shopping, and hung out on the beach. Mid 80 degree weather couldn't have come at a more perfect time!

Thanks fam for making us dinner, giving us a place to stay, and for the company!

My Rangers!

Since I've been back I've watched a lot of Rangers Games on TV. And even though it was 100 degrees outside I made it out to a game! I love my Rangers and missed them a lot when I was in London. Checking the score from the night before was one of my routines every morning :) I love the ballpark and had a great time with my friend Ryan. I might have to try and make it out to another now that it's cooler outside! yea!

Babysitting my Nephews

A day after I arived back home I went to pick up my nephews so I could watch them for 4 days! It was definately a challenge, but we had a great time. I tried to have something fun planned for them everday. The first day we kept it easy and went swimming at Bubby and Stephs. The boys were so worn out I couldn't even wake them up from their naps! After mom got home and made dinner we took them to Woolley's for ice cream. I had promised Sterling this earlier in the day and he did not forget! As soon as we finished dinner he said, "Auntie Tay Tay can we go get ice cream now?" haha. 



On Thursday Briana joined us at the Museum for a day a of fun!We learned about the stars and sky from Big Bird, played with Legos, learned about dinosaurs, and played in the Children's area. The boys had a lot of fun and I think Briana and I did too! That night we went to Nanny and PawPaw's for dinner. Hudson ended up providing the biggest laughs of the week when he kept jumping on Sterling and said "I'm bull riding." Sterling got into it too and would try to "buck" Hudson off. (Sadly the pics are on my phone at the moment).


On Friday we went to Lego Land in Grapevine. It was definately an experience trying to keep up with 2 boys on my own. It probably wasn't the most fun we had during the week, but both Sterling and Hudson got a special lego toy that GiGi bought for them. That night Mommy and Daddy arrived to pick them up and they went CRAZY! 



Overall we had a great time! Sterling loved playing with my camera, Hudson with my phone, and they each had their own special thing they liked to play with at the house. They love Kitty and Ella and Sterling got to sleep in the guest bed like a big boy. Hudson can't wait to see me again and Sterling has a fear of being left everywhere now (he claims I left him at Lego Land and keeps asking Sissy if she's going to leave him!). Well 1 out of 2 isn't bad for my first try :)
